Cured pure sheep cheese with La Mancha Designation of Origin, with pressed paste, made with pasteurised Manchega sheep milk, aged for 7-9 months and then aged for at least 60 days in extra virgin olive oil.
The rind is hard and the paste varies in colour from white to yellowish ivory. Slightly acidic, strong and very tasty flavour.
