Cured mixed milk cheese made with sheep, goat and cow milk, pressed paste, aged for 3-4 months and then aged for a minimum of 60 days in extra virgin olive oil.
The rind is soft and the paste varies in colour from white to yellowish ivory. Acidic and slightly bitter taste due to the extra virgin olive oil which increases with ageing.
